Summer Caprese Salad

We had such a beautiful weekend here at the Jersey Shore to kick off the start of summer! It was filled with great food, friends and lots of sunshine. As we return to work this Tuesday, we are looking forward to sharing our summer entertaining tips with you. We love to try making different salads, mixing light cocktails and experimenting how to change up the look of our backyard. The fun is just beginning!

So today we are starting off with a classic, caprese salad. This is a staple at all of our summer parties (and we really mean all.) It is light, refreshing, fresh, tasty and the best part, super simple to assemble! That is really important to us as we entertain in the summer, we can’t be stuck in the kitchen waiting on our food, we want to be out with our guests enjoy the event! So here is a reminder to never over-look the basics at a party, they are often the most favored!

Summer Caprese Salad

  • 1 pound fresh mozzarella, cut 1/4 inch thick
  • 3 Jersey Tomatoes, cut 1/4 inch thick
  • 10 – 20 fresh basil leaves
  • Course Salt and Pepper
  • Extra Virgin Olive Oil
  • Vinegar or a Balsamic Reduction

In a shallow platter, layer slices of cheese, tomato and basil leaves together. Once all assembled, sprinkle with salt and pepper and drizzle olive oil and vinegar on top. Volia! It’s that simple!
