Hearty Quinoa Bowl
One of my favorite dishes in quinoa! The very versatile grain is being incorporated into just about every meal. Breakfast bowls, lunch salads and one-pot dinners. Lately, I love loading quinoa with tons of veggies, a protein packed meal that keeps you fuller, longer. And now withe the change of seasons, adding root vegetables makes for one hearty meal! Here is my go-to recipe for a hearty quinoa bowl.
- 1 cup quinoa rice blend, cooked
- 3 carrots, peeled and cut into chunks
- 1/2 cup of brussels sprouts, halved
- 2 small turnips
- 1/2 red onion, chopped
- 2 cloves of garlic. chopped
- fresh rosemary
- salt and pepper
- fresh herbs to garnish
On a baking sheet, toss vegetables with olive oil, a few sprigs of fresh rosemary and salt and pepper, bake at 350 degrees for about 30 minutes until the vegetables are tender. Combine with with cooked quinoa and eat right away or chilled.The flavors of the vegetables are enhanced when roasting, and especially when you add onion and garlic. This makes for a delicous meal or side dish! Enjoy!
