Grilled Pound Cake and Peaches

April 23, 2014 by Amanda Willis

With spring in the air and summer around the corner, it is time to dust off the grill! Nothing screams summer more than the smell of the grill filling the air with our favorite smells and making our mouths water. To start off grilling season, we will showcase a favorite grilled dessert, because why wait until the end of the meal for the best part?

Grilled Pound Cake and Peaches

  • 1 loaf vanilla poundcake
  • 2 to 3 peaches, sliced
  • 1/3 cup dark rum
  • 1 tbsp. vanilla extract
  • 2 tbsp. melted butter
  • Caramel Sauce to Garnish
  • Fresh Whipped Cream or Ice Cream

Add rum and vanilla into bowl, add peach slices to soak and set aside. Slice pound cake and brush each side with melted butter. Place pound cake slices on grill and flip after a minute or two. (Note* Must watch pound cake on grill, will easily burn!) Once each side has grill marks, plate them on your serving platter. In a small sauce pan, heat peaches on top of  the grill with rum, vanilla mixture. Let the juice of the peaches combine with the rum and after a few minutes of heating, move peaches to grill to get a nice char and marks on each side. (Note* Careful, peaches are soaked in alcohol, flames will get bigger!) Let the juice in the sauce pan reduce, you may want to add a few pats on butter to thicken. Once peaches are charred, place on top of the pound cake and drizzle the sauce over. Serve warm with fresh whipped cream or ice cream and caramel sauce. Enjoy!

On the run? Make these tasty treats ahead of time and bring them to a backyard barbecue or picnic, delicous at room temperature too!
