Chicken Lettuce Wraps
With summer on the way, it is important to us to eat healthy and serve lighter options for our guests. And whether it is a dinner party or just cocktails, it is nice to offer food that won’t leave your guests feeling too full to enjoy the party. We created this recipe with that in mind, can be served as an appetizer or full meal and is just right for the waistline. Enjoy our Chicken Lettuce Wraps!
We wanted a meal idea that is loaded with veggies, packed with protein and full of flavor, these lettuce wraps are a great combination of all three! As this is a totally versatile dish, you fill the plate with anything want you want! We went for an Asian style, with a homemade peanut sauce for the chicken topped with sesame seeds.Here is what we served…
- Start with your choice of Iceberg lettuce or Romaine leaves.
- On a serving platter, place carrots, red peppers, diced cucumber and shelled edamame. Arrange lettuce cups or leaves,we added chopped peanuts for an added crunch.
- Add chicken to the plate and top with sesame seeds.
- Offer a sweet and sour sauce for dipping!
- 1 cup of creamy peanut butter
- 1/4 soy sauce
- 2 tsp of sriracha
- 2 tsp dark brown sugar
- juice of a fresh lime
In a small sauce pan, add peanut butter and soy sauce and let slightly melt. Add sugar and still until dissolved. Once smooth, add sriracha and fresh lime juice. Drizzle sauce over grilled chicken and slice into strips, the perfect size for a lettuce wrap.
This dish is so yummy! Great flavor combinations with the crisp vegetables and the peanut sauce topped with salty peanuts and a sweet and sour sauce, so good!
