RECIPE: Cauliflower Steaks with Avocado Chimmichuri

Meatless Monday just got a whole lot more tasty…

I love cauliflower prepared in every way possible! Steamed, roasted, smashed, you name it, I love it. As we were thinking of new recipes for a Meatless Monday, I wanted to use cauliflower as the main dish. So I decided on Cauliflower steaks! I figured if I seasoned a thick slice of cauliflower as I would a steak (brushed with olive oil, salt and pepper) and grilled it until roasted perfection, I would have a very hearty dinner and not even realize I was missing any meat! Now we look forward to meatless Monday

I was nervous that ‘cauliflower steaks’ would just taste like roasted vegetables so I wanted to reinvent I sauce I love to have on steaks for my meatless option. The more spice the better, so I chose to make a chimmichurri sauce. And in an attempt to pack as many vegetables into one seating at once, I made an avocado chimmichirri sauce (recipe below) that took this meal to the next level! Enjoy!

Recipe: Cauliflower Steaks with Avocado Chimmichurri

Steak Ingredients

  • Large head of cauliflower
  • 2 Tbsp olive oil
  • Salt and Pepper

Sauce Ingredients

  • 1 cup fresh cilantro
  • 2/3 cup fresh parsley
  • 1/4 cup fresh oregano
  • 2 garlic cloves
  • 1/4 cup red wine vinegar
  • 2/3 olive oil
  • 2 Tbsp water
  • 1 avocado
  • Crushed red pepper
  • Salt and Pepper

Cut cauliflower head into thick slices. Brush with olive oil and season with salt and pepper. Either roast in oven, or grill until soft with grill marks or golden brown edging.

Using a Ninja, or blender, fill container with cilantro, parsley, oregano, garlic, vinegar and oil. Pulse for about five minutes until everything is combined and turning is a sauce texture. Add avocado, water and dry seasonings. Pulse until avocado is a smooth consistency within the sauce.

Once cauliflower steak are ready, carefully place the steak on a plate or over the side dish. To pack more protein in the meal, I made a zucchini quinoa. After steak is plated, add a generous amount of the avocado chimmichurri and the dish is complete!

The sauce really took the dish to a whole new level. Since chimmichurri is a great pair with red meat, my avocado version was not making me miss the real deal meat. The cauliflower steak was so hearty and filling, I couldn’t believe what I was eating. You have to try this recipe for your next Meatless Monday!
